Amazingly Juicy Slow-Cooked Chicken Thighs

It is amazing how juicy chicken thighs are! Yet chicken breasts get all the attention.

Slow-cooker chicken thighs don’t require any fancy preparation. You just pour some spice on the chicken, put the seasoned chicken into the slow-cooker and come back hours later to find a delicious Paleo dinner ready for you.

How to make Slow- Cooker Chicken Thighs


1. Sprinkle spices onto about 2 pounds of chicken thighs (bone in/skin on).

I used salt, pepper and other spices.

I’ve used a Hawaiian Macadamia nut seasoning before, and even some Mrs. Dash Original seasoning on the chicken.

But add whatever your favorite spices are. Or try new things and get creative.

Add a generous amount of the seasoning onto the chicken.


2. Spray olive oil into the slow cooker


3. Place the chicken into the slow cooker

In the picture above I used just 2 pieces of chicken but other times I’ve  laid down about 2 pounds of chicken thighs into the slow cooker.

I had so many that I had to stack a few on top of others. I thought this might negatively affect the chicken but it didn’t seem to.



4. Secure the lid and cook on low for 5-6 hours. 

I cooked mine for 5.5 hours and they were delicious.

Check the internal temperature with a thermometer and make sure they are at least 165-degree F.
